You're right. There is plenty missing from the book and also much is diminished. However, it would prove impossible to cram all of that dialogue into a feature film without the audience turning it off. But for the most part, I think the movie encompasses Jorge's argument pretty thoroughly in those last scenes in the library. The filmmaker leaves out important statements that Jorge makes towards his argument but he does get his main points across to William.
